These rum balls with coconut are perfectly-sized no-bake treats for adults.
They are very easy to make and super delicious.
Ingredients:
200 g wholemeal biscuits or you can also use butter biscuits
80 g icing sugar
100 g coconut flour + 40 g for the coat
100 g chocolate powder
200g soften unsalted butter, cut into pieces
4 tbsp rum
2 tsp vanilla extract or sugar
How to make:
Place your cookies in a large ziplock or any other small bag and crush them with a rolling pin. You could also crush them in a food processor.
In a large bowl combine together all ingredients. Use your hands. Shape mixture into small balls (around 2 cm) and then roll each ball in coconut flour. You can make around 40 balls, it depends on the size. Place them on a tray or plate. You can put them in the refrigerator or just leave it hidden somewhere in the kitchen in a plastic bowl with lid until you serve them.
And good luck not eating any balls while you make them! I couldn’t resist them.
Tip: Instead of rum you can add orange juice for kids addition.
Tip: You can play around with rum, add more or less than 4 tbsp. Taste the mixture.
